Cowboy Pancakes: Healthy Pancake Recipe

One of my families favourite weekend breakfast items is a Cowboy Pancake recipe given to me by my dad years ago. Tucked inside my kitchen cabinet, the recipe is getting pretty weathered from years of use. The kids love helping make the batter, such a great family activity on a lazy Sunday morning!

The original Cowboy Pancake recipe is:


  • 2 medium eggs
  • 2 cups homo milk
  • 1/4 cup canola oil
  • 2 cups all-purpose flour
  • 1 tsp. salt
  • 3 tbsp. sugar
  • 6 tsp. baking powder

Beat 2 medium eggs in mixing bowl, add 2 cups of milk and 1/4 cup of canola oil. Beat in 2 cups of flour, 1 tsp. salt, 3 tbsp. sugar and 6 tsp. of baking powder. Beat just until smooth, don’t overdo it or the pancakes will turn out tougher than desired *unless you are into that kind of thing 🙂 .

My healthier variation on the classic recipe offers fewer calories, a bit less fat and more healthy grains.

Healthy Cowboy Pancakes ingredients:

  • 2 large eggs
  • 2 cups skim milk (substitute soy milk as desired)
  • 2 tbsp canola oil
  • 2 tbsp flax oil
  • 1 3/4 cups whole-wheat flour
  • 1/4 cup ground flaxmeal
  • 1/2 tsp. salt
  • 1 tbsp. brown sugar
  • 4 tsp. baking powder

Follow the same directions as the classic recipe, I often will mix in blueberries or raspberries to give some natural sweetness.
