Looking for a simple recipe for halibut? This is one we all enjoy, even the kids, accenting the taste of the firm halibut with a pop of lemon-garlic flavour vinaigrette.
- 4 – 150 gram halibut steaks (about 2 cm thick)
- 2 1/2 tablespoons fresh lemon juice
- 1/2 teaspoon grated lemon peel
- 2 tablespoons extra-virgin olive oil
- 3 garlic cloves, crushed and finely chopped
Vinaigrette: Whisk the lemon juice, olive oil, chopped garlic cloves and grated lemon peel in small bowl. Prepare at least an hour ahead to let the flavours infuse and let stand at room temperature.
Heat BBQ (medium-high heat) or non-stick frying pan. Season halibut steaks with salt and pepper. Divide the vinaigrette into two bowls, reserve one for later, use the other for brushing on the fish.
Brush halibut with around 1 tablespoon vinaigrette each. Grill halibut steaks until just cooked through, about 4 minutes per side, brushing marinade on each side when you turn. Transfer fish to plates.
Rewhisk remaining vinaigrette and drizzle over the fish.
